The Wand Chooses the Wizard.

Always experimenting with different ways to hold the lame.  Trying a new approach with more of a backwards swoop.  Here is some bread I baked today.

40% Maine Grains Whole Wheat.
Bread projects for tomorrow.

  1. Wow that loaf looks amazing!! Perfect crust, beautiful blisters and it just looks tasty. Loving the slashes and the beautiful color. You master you!!!! Keep baking brother. I have a question about the seam up or down when proofing, how are you positioning them on the cloth after shaping? I know the basket its seam up, but what is the physics behind the seam up seam down??

  2. Thanks Alen! Lodge cast irons are great for consistent results. I suppose the physics are the same as for a basket. The integrity of the loaf shall not be sacrificed! The time will come when it must leave the couche, its easier to go seem side up so when you flip the linen you catch the loaf right side up. You want to handle the dough as little as possible at this fragile state.
