I have a question about the seam up or down when proofing, how are you positioning them on the cloth after shaping? I know the basket its seam up, but what is the physics behind the seam up seam down??
Thanks Alen! Lodge cast irons are great for consistent results. I suppose the physics are the same as for a basket. The integrity of the loaf shall not be sacrificed! The time will come when it must leave the couche, its easier to go seem side up so when you flip the linen you catch the loaf right side up. You want to handle the dough as little as possible at this fragile state.
